Description

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 8 cups chicken broth
  • 2 cups water
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 2 cups egg noodles
  • 2 tbsp fresh parsley, chopped

Instructions

  1. In a large pot, bring chicken broth and water to a boil.
  2. Add chicken breasts, reduce heat, and simmer for 20 minutes until cooked.
  3. Remove chicken, shred it, and set aside.
  4. Add carrots, celery, onion, garlic, salt, pepper, and thyme to the pot.
  5. Simmer for 10 minutes until vegetables soften.
  6. Stir in egg noodles and cook for 8 minutes.
  7. Return shredded chicken to the pot.
  8. Garnish with parsley before serving.
