Ingredients

- 1 lb boneless, skinless chicken breasts
- 8 cups chicken broth
- 2 cups water
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 2 cups egg noodles
- 2 tbsp fresh parsley, chopped
Instructions
- In a large pot, bring chicken broth and water to a boil.
- Add chicken breasts, reduce heat, and simmer for 20 minutes until cooked.
- Remove chicken, shred it, and set aside.
- Add carrots, celery, onion, garlic, salt, pepper, and thyme to the pot.
- Simmer for 10 minutes until vegetables soften.
- Stir in egg noodles and cook for 8 minutes.
- Return shredded chicken to the pot.
- Garnish with parsley before serving.
Notes
- Use rotisserie chicken for a quicker version.
- Store leftovers in the fridge for up to 3 days.
- Freeze without noodles for best results.
