  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 cups egg noodles
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until softened, about 5 minutes.
  2. Add garlic and cook for an additional minute until fragrant.
  3. Pour in the chicken broth and bring to a boil.
  4. Stir in the shredded chicken, thyme, parsley, salt, and pepper.
  5. Add the egg noodles and cook according to package instructions until tender, about 6-8 minutes.
  6. Taste and adjust seasoning as necessary.
  7. Serve hot, garnished with fresh parsley.
