Ingredients

- 2 celery stalks, sliced

- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 2 cups egg noodles
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until softened, about 5 minutes.
- Add garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and bring to a boil.
- Stir in the shredded chicken, thyme, parsley, salt, and pepper.
- Add the egg noodles and cook according to package instructions until tender, about 6-8 minutes.
- Taste and adjust seasoning as necessary.
- Serve hot, garnished with fresh parsley.
Notes
- For a richer flavor, use homemade chicken broth.
- Feel free to add other vegetables like peas or corn.
