Homemade chicken noodle soup made with fresh ingredients.


Ingredients

  • 1 whole chicken (about 34 lbs)
  • 8 cups of water
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 oz egg noodles
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme
  • 1 bay leaf
  • 2 tbsp parsley, chopped

Instructions

  1. Place the chicken in a large pot and add water.
  2. Bring to a boil, then reduce heat and simmer for 1 hour.
  3. Remove the chicken and let it cool.
  4. Add carrots, celery, onion, and garlic to the pot.
  5. Cook for 15 minutes until vegetables are tender.
  6. Shred the chicken and return it to the pot.
  7. Add egg noodles, salt, pepper, thyme, and bay leaf.
  8. Cook for another 10 minutes until noodles are soft.
  9. Remove bay leaf and stir in parsley before serving.

Notes

  • Store leftovers in the refrigerator for up to 3 days.
  • Add more water if you prefer a thinner soup.
  • Use rotisserie chicken for a quicker option.
