Description
Homemade chicken noodle soup made with fresh ingredients.
Ingredients

- 1 whole chicken (about 3–4 lbs)
- 8 cups of water
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 8 oz egg noodles
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 1 bay leaf
- 2 tbsp parsley, chopped
Instructions
- Place the chicken in a large pot and add water.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove the chicken and let it cool.
- Add carrots, celery, onion, and garlic to the pot.
- Cook for 15 minutes until vegetables are tender.
- Shred the chicken and return it to the pot.
- Add egg noodles, salt, pepper, thyme, and bay leaf.
- Cook for another 10 minutes until noodles are soft.
- Remove bay leaf and stir in parsley before serving.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- Add more water if you prefer a thinner soup.
- Use rotisserie chicken for a quicker option.
