Ingredients

  • 8 cups of water
  • 2 cups carrots, chopped
  • 2 cups celery, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 8 oz egg noodles
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tsp dried thyme
  • 2 bay leaves
  • Fresh parsley for garnish

Instructions

  1. Place the chicken in a large pot and cover with water.
  2. Add carrots, celery, onion, garlic, salt, pepper, thyme, and bay leaves.
  3. Bring to a boil, then reduce heat and simmer for 1 hour.
  4. Remove the chicken, let it cool, and shred the meat.
  5. Return the shredded chicken to the pot.
  6. Add egg noodles and cook for 10 minutes until tender.
  7. Remove bay leaves and adjust seasoning if needed.
