A comforting homemade chicken noodle soup perfect for any meal.
Ingredients

- 1 whole chicken (about 3–4 lbs)
- 8 cups of water
- 2 cups carrots, chopped
- 2 cups celery, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 8 oz egg noodles
- 2 tsp salt
- 1 tsp black pepper
- 2 tsp dried thyme
- 2 bay leaves
- Fresh parsley for garnish
Instructions
- Place the chicken in a large pot and cover with water.
- Add carrots, celery, onion, garlic, salt, pepper, thyme, and bay leaves.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove the chicken, let it cool, and shred the meat.
- Return the shredded chicken to the pot.
- Add egg noodles and cook for 10 minutes until tender.
- Remove bay leaves and adjust seasoning if needed.
- Garnish with fresh parsley before serving.
Notes
- Store leftovers in the fridge for up to 3 days.
- You can freeze the soup for up to 3 months.
- Feel free to add other vegetables like peas or corn.
