Description
A warm and comforting chicken noodle soup.
Ingredients

- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- 2 cups egg noodles
- Salt and pepper to taste
Instructions
- In a large pot, heat a little oil over medium heat.
- Add onion and garlic, sauté until fragrant.
- Add carrots and celery, cook for 5 minutes.
- Pour in chicken broth and add thyme and bay leaf.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add shredded chicken and egg noodles, cook until noodles are tender.
- Season with salt and pepper to taste.
- Remove bay leaf before serving.
Notes
- Use rotisserie chicken for faster preparation.
- Adjust seasoning based on preference.
- Store leftovers in the refrigerator for up to 3 days.
