Description

A comforting chicken noodle soup made from scratch.


Ingredients

  • 1 whole chicken (about 4 lbs)
  • 10 cups water
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 8 oz egg noodles
  • Fresh parsley for garnish

Instructions

  1. Place the whole chicken in a large pot and cover with water.
  2. Add carrots, celery, onion, garlic, salt, pepper, and thyme.
  3. Bring to a boil, then reduce heat and simmer for 1 hour.
  4. Remove the chicken and let it cool. Skim off any fat from the broth.
  5. Shred the chicken meat and return it to the pot.
  6. Add egg noodles and cook according to package instructions.
  7. Garnish with fresh parsley before serving.
