Description
A comforting chicken noodle soup made from scratch.
Ingredients
Scale
- 1 whole chicken (about 4 lbs)
- 10 cups water
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 8 oz egg noodles
- Fresh parsley for garnish
Instructions
- Place the whole chicken in a large pot and cover with water.
- Add carrots, celery, onion, garlic, salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove the chicken and let it cool. Skim off any fat from the broth.
- Shred the chicken meat and return it to the pot.
- Add egg noodles and cook according to package instructions.
- Garnish with fresh parsley before serving.

- You can adjust the seasoning to your taste.
- This soup freezes well for later use.
