Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 8 ounces egg noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, sauté until the onion is translucent.
  2. Add the carrots and celery, and cook for about 5 minutes until they start to soften.
  3. Pour in the chicken broth and bring to a boil.
  4. Stir in the shredded chicken, thyme, parsley, and bay leaf. Season with salt and pepper.
  5. Reduce heat and let it simmer for 15 minutes.
  6. Add the egg noodles and cook according to package instructions until al dente.
  7. Remove bay leaf and adjust seasoning if needed.
  8. Serve hot, garnished with fresh parsley if desired.
