Ingredients

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 medium carrots, sliced
- 2 celery stalks, sliced
- 8 cups chicken broth
- 2 cups shredded cooked chicken
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 bay leaf
- 8 ounces egg noodles
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion and garlic, sauté until the onion is translucent.
- Add the carrots and celery, and cook for about 5 minutes until they start to soften.
- Pour in the chicken broth and bring to a boil.
- Stir in the shredded chicken, thyme, parsley, and bay leaf. Season with salt and pepper.
- Reduce heat and let it simmer for 15 minutes.
- Add the egg noodles and cook according to package instructions until al dente.
- Remove bay leaf and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley if desired.
