Ingredients

  • 8 cups of water
  • 2 cups of carrots, sliced
  • 2 cups of celery, sliced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 8 ounces egg noodles
  • Fresh parsley for garnish

Instructions

  1. Place the chicken in a large pot and cover with water.
  2. Bring to a boil and reduce to a simmer.
  3. Add carrots, celery, onion, garlic, thyme, rosemary, salt, and pepper.
  4. Simmer for about 1 hour or until the chicken is cooked through.
  5. Remove the chicken and let it cool.
  6. Strain the broth to remove vegetables and herbs.
  7. Add the egg noodles to the broth and cook according to package instructions.
  8. Shred the chicken and add it back to the pot.
  9. Serve hot and garnish with fresh parsley.
