Ingredients

- 1 whole chicken (about 4 lbs)
- 8 cups of water
- 2 cups of carrots, sliced
- 2 cups of celery, sliced
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 8 ounces egg noodles
- Fresh parsley for garnish
Instructions
- Place the chicken in a large pot and cover with water.
- Bring to a boil and reduce to a simmer.
- Add carrots, celery, onion, garlic, thyme, rosemary, salt, and pepper.
- Simmer for about 1 hour or until the chicken is cooked through.
- Remove the chicken and let it cool.
- Strain the broth to remove vegetables and herbs.
- Add the egg noodles to the broth and cook according to package instructions.
- Shred the chicken and add it back to the pot.
- Serve hot and garnish with fresh parsley.

- Use leftover chicken for a quicker option.
- Adjust vegetable quantities as desired.
- Store leftovers in the refrigerator for up to 3 days.
