- 8 oz fettuccine pasta
- 2 boneless, skinless chicken breasts, sliced
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 2 tbsp butter
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 tsp dried thyme
- Fresh parsley for garnish
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large pan over medium-high heat. Add chicken, season with salt and pepper, and cook until browned. Remove and set aside.
- In the same pan, melt butter. Add mushrooms and cook until softened.
- Stir in garlic and thyme, sauté for 1 minute.
- Pour in chicken broth and heavy cream. Simmer for 5 minutes.
- Add cooked chicken back to the pan along with Parmesan cheese. Stir until the sauce thickens.
- Toss in the cooked pasta and mix well.
- Garnish with fresh parsley before serving.
Notes
- Use fresh mushrooms for the best flavor.
- For extra richness, add a splash of white wine with the broth.
- Substitute half-and-half for heavy cream for a lighter version.
