- 1 pound ground chicken
- 1/2 cup whole wheat breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 egg, beaten
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic, egg, Italian seasoning, salt, and pepper. Mix until well combined.
- Form the mixture into small meatballs, about 1 inch in diameter.
- Place the meatballs on a baking sheet lined with parchment paper and lightly spray with olive oil.
- Bake for 20-25 minutes, or until the meatballs are cooked through and golden brown.
- Serve with your favorite dipping sauce or over pasta with marinara sauce.
Notes
- These meatballs can be frozen for up to 3 months. Just bake them and allow to cool before freezing.
