- 4 lbs chicken (thighs and drumsticks)
- 1/2 cup pitted prunes
- 1/2 cup green olives
- 1/4 cup capers
- 6 garlic cloves, minced
- 2 tbsp dried oregano
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1/2 cup brown sugar
- 1/2 cup dry white wine
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- Combine chicken, prunes, olives, capers, garlic, oregano, vinegar, olive oil, and bay leaves in a large bowl. Mix well.
- Let marinate for at least 30 minutes or overnight in the fridge.
- Arrange chicken and marinade in a single layer in a baking dish.
- Sprinkle brown sugar evenly over the chicken.
- Pour white wine around the chicken.
- Bake for 50-60 minutes, basting occasionally, until chicken is cooked through.
- Serve warm.
