Ingredients

  • 4 lbs chicken (thighs and drumsticks)
  • 1/2 cup pitted prunes
  • 1/2 cup green olives
  • 1/4 cup capers
  • 6 garlic cloves, minced
  • 2 tbsp dried oregano
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1/2 cup brown sugar
  • 1/2 cup dry white wine
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine chicken, prunes, olives, capers, garlic, oregano, vinegar, olive oil, and bay leaves in a large bowl. Mix well.
  3. Let marinate for at least 30 minutes or overnight in the fridge.
  4. Arrange chicken and marinade in a single layer in a baking dish.
  5. Sprinkle brown sugar evenly over the chicken.
  6. Pour white wine around the chicken.
  7. Bake for 50-60 minutes, basting occasionally, until chicken is cooked through.
  8. Serve warm.
