Ingredients

  • ground chicken – 500 g (about 1 lb)
  • onion – 1 medium, finely chopped
  • garlic – 3 cloves, minced
  • fresh parsley – 1/4 cup, chopped
  • fresh cilantro – 1/4 cup, chopped
  • ground cumin – 1 teaspoon
  • ground coriander – 1 teaspoon
  • salt – 1 teaspoon
  • black pepper – 1/2 teaspoon
  • lemon juice – 1 tablespoon
  • olive oil – 1 tablespoon (for grilling)

For the Garlic Yogurt Sauce:

  • plain yogurt – 1 cup
  • garlic – 2 cloves, minced
  • lemon juice – 1 tablespoon
  • salt – to taste
  • fresh dill or mint – 1 tablespoon, chopped (optional)

Instructions

  1. Prepare the kofta mixture: In a large bowl, combine the ground chicken, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, salt, pepper, and lemon juice. Mix well until all ingredients are evenly incorporated.
  2. Shape the kofta: Wet your hands with water to prevent sticking. Take a portion of the mixture and shape it into elongated ovals or patties, about 2-3 inches long. Place them on a plate as you shape the rest.
  3. Preheat the grill: Heat your grill or grill pan over medium-high heat. Brush the grill with olive oil to prevent sticking.
  4. Grill the kofta: Once the grill is hot, place the kofta on it. Grill for about 5-7 minutes on each side, or until they are cooked through and have a nice golden brown color with charred edges. Make sure to turn them carefully to avoid breaking.
  5. Make the garlic yogurt sauce: While the kofta is grilling, prepare the sauce. In a bowl, combine the yogurt, minced garlic, lemon juice, and salt. Mix well. If desired, stir in the chopped dill or mint for added flavor.
  6. Serve: Once the kofta are done, remove them from the grill and let them rest for a minute. Serve them warm alongside the garlic yogurt sauce. Drizzle with olive oil and garnish with additional fresh herbs if desired.
