Description
Juicy chicken kofta served with a creamy garlic yogurt sauce.
Ingredients
- ground chicken – 500 g (about 1 lb)
- onion – 1 medium, finely chopped
- garlic – 3 cloves, minced
- fresh parsley – 1/4 cup, chopped
- fresh cilantro – 1/4 cup, chopped
- ground cumin – 1 teaspoon
- ground coriander – 1 teaspoon
- salt – 1 teaspoon
- black pepper – 1/2 teaspoon
- lemon juice – 1 tablespoon
- olive oil – 1 tablespoon (for grilling)
For the Garlic Yogurt Sauce:
- plain yogurt – 1 cup
- garlic – 2 cloves, minced
- lemon juice – 1 tablespoon
- salt – to taste
- fresh dill or mint – 1 tablespoon, chopped (optional)
Instructions
- Prepare the kofta mixture: In a large bowl, combine the ground chicken, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, salt, pepper, and lemon juice. Mix well until all ingredients are evenly incorporated.
- Shape the kofta: Wet your hands with water to prevent sticking. Take a portion of the mixture and shape it into elongated ovals or patties, about 2-3 inches long. Place them on a plate as you shape the rest.
- Preheat the grill: Heat your grill or grill pan over medium-high heat. Brush the grill with olive oil to prevent sticking.
- Grill the kofta: Once the grill is hot, place the kofta on it. Grill for about 5-7 minutes on each side, or until they are cooked through and have a nice golden brown color with charred edges. Make sure to turn them carefully to avoid breaking.
- Make the garlic yogurt sauce: While the kofta is grilling, prepare the sauce. In a bowl, combine the yogurt, minced garlic, lemon juice, and salt. Mix well. If desired, stir in the chopped dill or mint for added flavor.
- Serve: Once the kofta are done, remove them from the grill and let them rest for a minute. Serve them warm alongside the garlic yogurt sauce. Drizzle with olive oil and garnish with additional fresh herbs if desired.
Notes
- Use lean ground chicken for best results.
- Keep hands wet while shaping kofta to prevent sticking.
