Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup dry white wine
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1/2 cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium heat.
  3. Add chicken and cook for 5-6 minutes per side until golden. Remove and set aside.
  4. In the same skillet, sauté onion and garlic until soft.
  5. Pour in white wine and chicken broth, scraping up browned bits.
  6. Bring to a simmer, then return chicken to the skillet.
  7. Add thyme and cook for 10 minutes until chicken is cooked through.
  8. Stir in heavy cream and simmer for 2 minutes.
  9. Garnish with fresh parsley before serving.

Notes

  • Use a dry white wine like Chardonnay or Sauvignon Blanc.
  • For a thicker sauce, mix 1 tsp cornstarch with 1 tbsp water and stir in at the end.
  • Serve with mashed potatoes or pasta.
