  • 1 lb (450g) boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 4 pita breads
  • 1 cup cucumber, diced
  • 1 cup tomatoes, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup tzatziki sauce

Instructions

  1. In a bowl, combine olive oil, lemon juice, oregano, garlic, salt, and pepper. Add the chicken thighs and marinate for at least 30 minutes, preferably in the refrigerator.
  2. Heat a grill or skillet over medium-high heat. Cook the chicken for about 6-7 minutes per side until fully cooked and the internal temperature reaches 165°F (75°C).
  3. Once cooked, remove the chicken from the heat and let it rest for a few minutes before slicing it into strips.
  4. Warm the pita breads on the grill or in a skillet for about 1 minute on each side.
  5. Assemble the gyros by placing sliced chicken on each pita, then topping with diced cucumber, tomatoes, red onion, and a generous drizzle of tzatziki sauce.
  6. Wrap the pita around the fillings and serve immediately.
