Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 4 pita breads
  • 1 cup diced tomatoes
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup lettuce, shredded
  • 1 cup tzatziki sauce

Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper to create a marinade.
  2. Add chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
  3. Preheat grill or skillet over medium-high heat.
  4. Remove chicken from marinade and grill for about 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C).
  5. Let the chicken rest for 5 minutes, then slice into strips.
  6. Warm pita breads on the grill or in a skillet for 1-2 minutes.
  7. Assemble the gyros by placing sliced chicken in the pita, topped with tomatoes, cucumber, red onion, lettuce, and a generous drizzle of tzatziki sauce.
  8. Wrap the pita around the filling and serve immediately.

Notes

  • For extra flavor, marinate the chicken overnight.
  • You can substitute chicken thighs with chicken breast if preferred.
