Description

This chicken gyro recipe features marinated grilled chicken, fresh vegetables, and a creamy tzatziki sauce, all wrapped in warm pita bread for a delicious meal.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons plain yogurt
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 4 pitas or flatbreads
  • 1 cup lettuce, shredded
  • 1 tomato, diced
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • Tzatziki sauce for serving

Instructions

  1. In a medium bowl, whisk together olive oil, yogurt, garlic, oregano, cumin, salt, and pepper.
  2. Add chicken thighs to the marinade and coat well. Cover and refrigerate for at least 1 hour or overnight for best flavor.
  3. Preheat grill or grill pan over medium-high heat. Remove chicken from marinade and discard the marinade.
  4. Grill chicken for 6-8 minutes on each side, or until cooked through and juices run clear. Remove from heat and let rest for a few minutes before slicing.
  5. Warm pitas on the grill for about 1 minute on each side.
  6. To assemble the gyros, place sliced chicken on each pita, top with lettuce, tomato, cucumber, and red onion.
  7. Drizzle with tzatziki sauce and wrap the pita around the filling. Serve immediately.
