A simple and tasty chicken fried rice recipe.
Ingredients

- 2 cups cooked rice
- 1 cup diced chicken breast
- 1/2 cup peas and carrots
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat oil in a pan over medium heat.
- Add chicken and cook until browned.
- Add peas and carrots; stir for 2 minutes.
- Push mixture to the side, add eggs, and scramble.
- Add cooked rice and soy sauce; mix well.
- Season with salt and pepper.
- Stir in green onions before serving.
Notes
- Use leftover rice for better texture.
- Adjust soy sauce to taste.
- Can add more vegetables if desired.
