- 2 cups cooked white rice (preferably day-old)
- 1 cup cooked chicken, shredded or diced
- 2 tablespoons vegetable oil
- 3 green onions, chopped
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the chopped green onions and mixed vegetables. Stir-fry for 2-3 minutes until they are tender.
- Push the vegetables to the side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked.
- Add the cooked chicken to the skillet and stir to combine with the vegetables and eggs.
- Add the cooked rice to the skillet, breaking up any clumps. Stir everything together.
- Pour the soy sauce and sesame oil over the rice mixture. Stir well to coat all ingredients evenly.
- Season with salt and pepper to taste. Cook for an additional 2-3 minutes until everything is heated through.
- Serve hot and enjoy your homemade chicken fried rice!
