Ingredients

  • 2 cups cooked white rice (preferably day-old)
  • 1 cup cooked chicken, shredded or diced
  • 2 tablespoons vegetable oil
  • 3 green onions, chopped
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the chopped green onions and mixed vegetables. Stir-fry for 2-3 minutes until they are tender.
  3. Push the vegetables to the side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked.
  4. Add the cooked chicken to the skillet and stir to combine with the vegetables and eggs.
  5. Add the cooked rice to the skillet, breaking up any clumps. Stir everything together.
  6. Pour the soy sauce and sesame oil over the rice mixture. Stir well to coat all ingredients evenly.
  7. Season with salt and pepper to taste. Cook for an additional 2-3 minutes until everything is heated through.
  8. Serve hot and enjoy your homemade chicken fried rice!
