Ingredients

  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet over medium heat, heat the olive oil. Add the chicken breasts and cook for 6-7 minutes on each side, or until they are fully cooked and golden brown. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream, stirring to combine, then add the grated Parmesan cheese and Italian seasoning. Cook for 3-4 minutes until the sauce thickens slightly.
  5. Add the fresh spinach to the sauce and cook until wilted, about 2 minutes.
  6. Return the cooked chicken to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.
  7. Garnish with chopped parsley before serving.
