- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet over medium heat, heat the olive oil. Add the chicken breasts and cook for 6-7 minutes on each side, or until they are fully cooked and golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the heavy cream, stirring to combine, then add the grated Parmesan cheese and Italian seasoning. Cook for 3-4 minutes until the sauce thickens slightly.
- Add the fresh spinach to the sauce and cook until wilted, about 2 minutes.
- Return the cooked chicken to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.
- Garnish with chopped parsley before serving.
Notes
- For added flavor, marinate the chicken in Italian seasoning and olive oil for a few hours before cooking.
- Serve with pasta or crusty bread to soak up the delicious sauce.
