  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup cooked rice
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Add chicken, bell peppers, onion, and garlic. Cook until chicken is no longer pink.
  4. Stir in chili powder, cumin, paprika, salt, and black pepper.
  5. Spread cooked rice in a baking dish.
  6. Top with chicken and vegetable mixture.
  7. Spread sour cream evenly over the top.
  8. Sprinkle shredded cheese on top.
  9. Bake for 20 minutes or until cheese is melted and bubbly.
  10. Garnish with chopped cilantro before serving.
