  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 2 cups chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: shredded cheese, sour cream, and green onions for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.
  2. Add the minced garlic and ground chicken to the pot. Cook until the chicken is browned and cooked through, breaking it up with a spoon as it cooks.
  3. Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for an additional 2 minutes to toast the spices.
  4. Add the black beans, kidney beans, diced tomatoes (with juice), and chicken broth to the pot. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat to low and let simmer for 20-30 minutes, stirring occasionally.
