- 1 lb ground chicken
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 2 cups chicken broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- Optional: shredded cheese, sour cream, and green onions for serving
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.
- Add the minced garlic and ground chicken to the pot. Cook until the chicken is browned and cooked through, breaking it up with a spoon as it cooks.
- Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for an additional 2 minutes to toast the spices.
- Add the black beans, kidney beans, diced tomatoes (with juice), and chicken broth to the pot. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low and let simmer for 20-30 minutes, stirring occasionally.
- Taste and adjust seasoning as necessary. Serve hot with optional toppings like shredded cheese, sour cream, and green onions.
