Ingredients

  • 1 whole chicken or 2 pounds of chicken bones
  • 12 cups of water
  • 2 medium onions, quartered
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, smashed
  • 1 bay leaf
  • 10 sprigs fresh parsley
  • 1 teaspoon whole black peppercorns
  • Salt to taste

Instructions

  1. Place the chicken or chicken bones in a large stockpot and cover with water.
  2. Add onions, carrots, celery, garlic, bay leaf, parsley, and peppercorns to the pot.
  3. Bring to a boil over medium-high heat, then reduce heat to low. Skim any foam that rises to the top.
  4. Cover and simmer for 4 to 6 hours, occasionally skimming the surface.
  5. Remove the chicken or bones from the pot and strain the broth through a fine-mesh strainer into another pot.
  6. Discard the solids and season the broth with salt to taste.
  7. Let the broth cool, then store in airtight containers in the refrigerator for up to 5 days or freeze for up to 3 months.
