- 1 whole chicken or 2 pounds of chicken bones
- 12 cups of water
- 2 medium onions, quartered
- 3 carrots, chopped
- 3 celery stalks, chopped
- 4 cloves garlic, smashed
- 1 bay leaf
- 10 sprigs fresh parsley
- 1 teaspoon whole black peppercorns
- Salt to taste
Instructions
- Place the chicken or chicken bones in a large stockpot and cover with water.
- Add onions, carrots, celery, garlic, bay leaf, parsley, and peppercorns to the pot.
- Bring to a boil over medium-high heat, then reduce heat to low. Skim any foam that rises to the top.
- Cover and simmer for 4 to 6 hours, occasionally skimming the surface.
- Remove the chicken or bones from the pot and strain the broth through a fine-mesh strainer into another pot.
- Discard the solids and season the broth with salt to taste.
- Let the broth cool, then store in airtight containers in the refrigerator for up to 5 days or freeze for up to 3 months.
