Ingredients

- 2 cups cooked rice (white or brown)
- 1 pound chicken breast, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup broccoli florets
- 1 cup bell peppers, sliced
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
- Lime wedges for serving
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add diced chicken and season with garlic powder, paprika, salt, and pepper. Cook until chicken is browned and cooked through, about 6-8 minutes.
- In the last few minutes of cooking the chicken, add broccoli florets and bell peppers to the skillet. Sauté until vegetables are tender.
- To assemble the bowls, divide cooked rice among serving bowls.
- Top each bowl with cooked chicken and vegetable mixture.
- Add avocado slices and fresh cilantro on top.
- Serve with lime wedges for squeezing over the bowls.
