- 2 cups cooked rice or quinoa
- 1 lb chicken breast, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cup corn, canned or frozen
- 1 cup black beans, drained and rinsed
- 1 avocado, sliced
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add diced chicken to the skillet and season with garlic powder, paprika, salt, and pepper.
- Cook the chicken for about 7-10 minutes or until fully cooked and no longer pink.
- In serving bowls, layer the cooked rice or quinoa, followed by the cooked chicken.
- Top with cherry tomatoes, corn, black beans, and avocado slices.
- Garnish with fresh cilantro and serve with lime wedges.
