Ingredients

  • 2 boneless chicken breasts, cubed
  • 1 cup butternut squash, diced
  • 1 cup Brussels sprouts, halved
  • 1 small red onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chicken and cook until browned, about 5 minutes.
  3. Remove chicken and set aside.
  4. In the same skillet, add vegetables and sauté for 5 minutes.
  5. Return chicken to the skillet, season with thyme, salt, and pepper.
  6. Cover and cook for 10 minutes until vegetables are tender.
