Ingredients

- 2 boneless chicken breasts, cubed
- 1 cup butternut squash, diced
- 1 cup Brussels sprouts, halved
- 1 small red onion, sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chicken and cook until browned, about 5 minutes.
- Remove chicken and set aside.
- In the same skillet, add vegetables and sauté for 5 minutes.
- Return chicken to the skillet, season with thyme, salt, and pepper.
- Cover and cook for 10 minutes until vegetables are tender.
