Ingredients

  • 1 carrot, diced

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add chicken and cook until browned.
  4. Stir in rice, salt, and pepper.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat and cover, simmer for 20 minutes.
  7. Add peas and carrots, stir well.
  8. Cover and cook for an additional 5 minutes.
  9. Remove from heat and let sit for 5 minutes before serving.
