- 2 cups egg noodles

- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onions, carrots, celery, and garlic. Sauté until vegetables are tender, about 5-7 minutes.
- Add chicken broth, shredded chicken, thyme, salt, and pepper. Bring to a boil.
- Stir in egg noodles and cook according to package instructions, usually about 8-10 minutes, until noodles are tender.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.

- For extra flavor, you can add a bay leaf while simmering the broth.
