Ingredients

  • 2 cups egg noodles
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, celery, and garlic. Sauté until vegetables are tender, about 5-7 minutes.
  2. Add chicken broth, shredded chicken, thyme, salt, and pepper. Bring to a boil.
  3. Stir in egg noodles and cook according to package instructions, usually about 8-10 minutes, until noodles are tender.
  4. Taste and adjust seasoning if necessary.
  5. Serve hot, garnished with fresh parsley.

Notes
