- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup heavy cream
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup butter, melted
- 1 cup milk
- Fresh parsley, for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Stir in garlic, thyme, and rosemary. Cook for another minute until fragrant.
- Add chicken broth and bring to a boil. Reduce heat and stir in shredded chicken and heavy cream. Simmer for 10 minutes.
- In a bowl, whisk together flour, baking powder, and salt. Stir in melted butter and milk until just combined.
- Drop spoonfuls of the dumpling batter into the simmering chicken mixture. Cover and cook for 15 minutes without lifting the lid.
- Garnish with fresh parsley before serving.
Notes
- For a richer flavor, use homemade chicken broth.
- Feel free to add your favorite vegetables like peas or green beans.
