  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup milk
  • 2 tablespoons butter, melted

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté until softened, about 5 minutes.
  2. Stir in garlic, thyme, and rosemary, and cook for another minute until fragrant.
  3. Pour in chicken broth and bring to a simmer. Add shredded chicken and frozen peas, then stir in heavy cream. Simmer for about 10 minutes.
  4. In a separate bowl, whisk together flour, baking powder, salt, and pepper. Stir in milk and melted butter until just combined.
  5. Drop spoonfuls of the dumpling mixture into the simmering chicken mixture. Cover and cook for 15 minutes without lifting the lid.
  6. Serve hot, garnished with fresh herbs if desired.
