- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup frozen peas
- 1 cup heavy cream
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup milk
- 2 tablespoons butter, melted
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté until softened, about 5 minutes.
- Stir in garlic, thyme, and rosemary, and cook for another minute until fragrant.
- Pour in chicken broth and bring to a simmer. Add shredded chicken and frozen peas, then stir in heavy cream. Simmer for about 10 minutes.
- In a separate bowl, whisk together flour, baking powder, salt, and pepper. Stir in milk and melted butter until just combined.
- Drop spoonfuls of the dumpling mixture into the simmering chicken mixture. Cover and cook for 15 minutes without lifting the lid.
- Serve hot, garnished with fresh herbs if desired.
