Description

A hearty and nutritious soup made with chicken and barley.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup barley
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Add garlic and cook for 1 minute.
  4. Add diced chicken and cook until browned.
  5. Pour in chicken broth and add barley, salt, pepper, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 45 minutes.
  7. Remove bay leaf before serving.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • You can substitute chicken breast with chicken thighs for more flavor.
