Description

Chicken Alfredo Stuffed Peppers are a delicious low-carb twist on classic comfort food. These bell peppers are filled with a creamy chicken and Alfredo mixture, then baked to perfection.


Ingredients

  • 4 large bell peppers (any color)
  • 2 cups cooked chicken, shredded
  • 1 cup Alfredo sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes.
  3. In a bowl, mix shredded chicken, Alfredo sauce, mozzarella cheese, Parmesan cheese, garlic powder, and black pepper.
  4. Stuff each bell pepper with the chicken mixture.
  5. Place peppers in a baking dish and cover with foil.
  6. Bake for 25 minutes. Remove foil and bake for another 10 minutes until cheese is bubbly.
  7. Serve hot.

  • Use rotisserie chicken for faster prep.
