- 8 oz fettuccine pasta
- 2 tablespoons olive oil
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/4 teaspoon nutmeg (optional)
- Chopped parsley for garnish
Instructions
- Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet.
- Cook the chicken for 6-7 minutes per side or until fully cooked and no longer pink in the center. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream and bring to a simmer. Reduce the heat to low and stir in the Parmesan cheese until melted and smooth.
- Add the cooked fettuccine to the sauce, tossing to coat the pasta evenly.
- Slice the chicken and place it on top of the pasta. Season with nutmeg, if using, and garnish with chopped parsley.
- Serve immediately and enjoy!
