- 2 lbs potatoes, diced
- 1 lb smoked sausage, sliced
- 1 cup shredded cheddar cheese
- 1 packet ranch seasoning mix
- 2 tbsp olive oil
- 1/2 cup sour cream
- 1/4 cup chopped green onions
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the diced potatoes with olive oil and ranch seasoning mix.
- Spread the potatoes evenly on a baking sheet and bake for 25 minutes.
- Add the sliced smoked sausage to the baking sheet and bake for an additional 15 minutes.
- Remove from the oven and sprinkle shredded cheddar cheese over the top. Return to the oven for 5 minutes or until the cheese is melted.
- Serve hot, garnished with sour cream and chopped green onions.
Notes
- For extra flavor, you can add diced bell peppers or onions with the potatoes.
- Adjust the amount of ranch seasoning to suit your taste.
