Ingredients

- 4 large potatoes, diced
- 1 onion, chopped
- 2 cups chicken broth
- 1 cup milk
- 2 cups cheddar cheese, shredded
- 1/2 cup sour cream
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat.
- Add chopped onion and sauté until translucent.
- Add diced potatoes and chicken broth. Bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Mash potatoes slightly for a creamy texture.
- Stir in milk and cheddar cheese until melted.
- Add sour cream and mix well.
- Season with salt and pepper.
- Serve hot.

- Use low-sodium broth for less salt.
- Add Beef Bacon bits for extra flavor.
- Garnish with green onions or additional cheese.
