A creamy and comforting cheesy potato soup that warms you up.
Ingredients

- 4 medium potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1/2 cup onion, chopped
- 4 cups chicken or vegetable broth
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and sauté until translucent.
- Add the diced potatoes and broth to the pot.
- Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Puree the soup with an immersion blender or in batches until smooth.
- Stir in the milk and cheddar cheese until melted and combined.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- For a thicker soup, add more potatoes.
- You can use any type of cheese you prefer.
- Garnish with green onions or Turkey Turkey Bacon bits if desired.
