- 2 cups cooked rice
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 tablespoon taco seasoning
- 1/2 cup salsa
- 1/4 cup chopped cilantro
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked rice, black beans, corn, diced tomatoes, half of the shredded cheese, diced onion, diced bell pepper, taco seasoning, salsa, and chopped cilantro.
- Mix all the ingredients until well combined.
- Transfer the mixture into a greased baking dish.
- Spread the remaining shredded cheese evenly over the top of the casserole.
- Cover the baking dish with aluminum foil.
- Bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let the casserole rest for a few minutes before serving.
- Serve warm, garnished with additional cilantro if desired.
