- 500g ground chicken
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup grated Parmesan cheese
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 800g canned crushed tomatoes
- 1 cup chicken broth
- 1 tsp dried basil
- 1 cup shredded mozzarella cheese
Instructions
- In a bowl, mix ground chicken, breadcrumbs, egg, Parmesan, oregano, garlic powder, salt, and pepper. Form into small meatballs.
- Heat olive oil in a large pot over medium heat. Cook meatballs until browned on all sides. Remove and set aside.
- In the same pot, sauté onion and garlic until soft, about 3 minutes.
- Add crushed tomatoes, chicken broth, and basil. Bring to a simmer.
- Return meatballs to the pot. Cover and simmer for 15 minutes.
- Sprinkle mozzarella cheese on top. Cover until cheese melts, about 2 minutes.
- Serve hot.
Notes
- Use fresh herbs for a more intense flavor.
- Double the recipe for leftovers.
- Freeze meatballs before cooking for meal prep.
