A hearty and cheesy one-pan meal combining beef, tortellini, and enchilada flavors for a quick dinner.
Ingredients

- 1 lb ground beef
- 1 package (9 oz) cheese tortellini
- 1 cup enchilada sauce
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1 tsp taco seasoning
- 2 tbsp olive oil
- 1/4 cup chopped cilantro (optional)
Instructions
- Heat olive oil in a skillet over medium heat. Add onion and sauté until soft.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in taco seasoning and enchilada sauce. Simmer for 2 minutes.
- Add tortellini and 1/2 cup water. Cover and cook for 7-8 minutes until tortellini is tender.
- Sprinkle shredded cheese on top, cover, and let melt for 2 minutes.
- Garnish with cilantro and serve hot.
Notes
- Use store-bought or homemade enchilada sauce.
- Substitute ground turkey for a lighter version.
- Add black beans or corn for extra texture.
