Ingredients

  • 4 large bell peppers (any color)
  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. Heat olive oil in a pan over medium heat. Cook chicken until no longer pink.
  4. Add onion and garlic, sauté until soft.
  5. Mix cooked rice, chicken, half the cheese, salt, pepper, and paprika in a bowl.
  6. Stuff peppers with the mixture and place in a baking dish.
  7. Top with remaining cheese.
  8. Bake for 25-30 minutes until peppers are tender.
  9. Garnish with parsley before serving.

  • Use pre-cooked rice for faster prep.
  • Substitute quinoa for rice if preferred.
