- 4 large bell peppers (any color)
- 2 cups cooked rice
- 1 lb chicken breast, diced
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- Heat olive oil in a pan over medium heat. Cook chicken until no longer pink.
- Add onion and garlic, sauté until soft.
- Mix cooked rice, chicken, half the cheese, salt, pepper, and paprika in a bowl.
- Stuff peppers with the mixture and place in a baking dish.
- Top with remaining cheese.
- Bake for 25-30 minutes until peppers are tender.
- Garnish with parsley before serving.
Notes
- Use pre-cooked rice for faster prep.
- Substitute quinoa for rice if preferred.
- Add diced tomatoes for extra flavor.
