- 1 lb boneless, skinless chicken breasts, diced
- 1 tbsp olive oil
- 1 cup diced onion
- 1 cup diced bell pepper
- 1 can (10 oz) red enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken and cook until no longer pink, about 5-6 minutes.
- Add onion and bell pepper. Cook until softened, about 3-4 minutes.
- Stir in enchilada sauce, cumin, chili powder, garlic powder, salt, and black pepper.
- Simmer for 5 minutes.
- Sprinkle cheeses evenly over the top.
- Cover and cook until cheese melts, about 2-3 minutes.
- Garnish with fresh cilantro before serving.

- Use pre-shredded cheese for faster prep.
- Add black beans or corn for extra texture.
