  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until no longer pink, about 5-6 minutes.
  3. Add onion and bell pepper. Cook until softened, about 3-4 minutes.
  4. Stir in enchilada sauce, cumin, chili powder, garlic powder, salt, and black pepper.
