  • 1 bell pepper, diced

  • 1 packet fajita seasoning
  • 1 can diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 cups beef broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat oil in a large skillet over medium heat. Cook ground beef until browned.
  3. Add bell pepper, onion, and garlic. Cook until vegetables soften.
  4. Stir in rice, fajita seasoning, diced tomatoes, and beef broth. Bring to a boil.
  5. Transfer mixture to a greased casserole dish.
  6. Cover and bake for 30 minutes.
  7. Remove cover, sprinkle cheeses on top, and bake uncovered for 10 more minutes until cheese melts.
  8. Let stand for 5 minutes before serving.
