- 1 lb ground beef
- 1 cup uncooked long-grain rice
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 packet fajita seasoning
- 1 can diced tomatoes
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 cups beef broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Heat oil in a large skillet over medium heat. Cook ground beef until browned.
- Add bell pepper, onion, and garlic. Cook until vegetables soften.
- Stir in rice, fajita seasoning, diced tomatoes, and beef broth. Bring to a boil.
- Transfer mixture to a greased casserole dish.
- Cover and bake for 30 minutes.
- Remove cover, sprinkle cheeses on top, and bake uncovered for 10 more minutes until cheese melts.
- Let stand for 5 minutes before serving.
Notes
- For spicier flavor, add jalapeños or hot sauce.
- Leftovers can be refrigerated for up to 3 days.
- Substitute ground turkey for a lighter option.
