- 1 ½ cups graham cracker crumbs
- ½ cup sugar
- ½ cup melted butter
- 4 (8 oz) packages cream cheese
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 2 cups fresh strawberries, pureed
- 1 cup sour cream
- ¼ cup sugar
- 2 cups sliced strawberries for topping
Instructions
- Preheat the oven to 325°F (160°C).
- Mix graham cracker crumbs, ½ cup sugar, and melted butter in a bowl.
- Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese and 1 cup sugar until smooth.
- Add vanilla and eggs, beating well after each addition.
- Mix in pureed strawberries and sour cream until combined.
- Pour the filling over the crust in the springform pan.
- Bake for 55-60 minutes or until set.
- Let it cool, then refrigerate for at least 4 hours.
- Top with sliced strawberries before serving.
