Ingredients

  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 eggs
  • 3 cups grated carrots
  • 1/2 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch pan.
  2. In a bowl, whisk flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, beat oil, granulated sugar, and brown sugar. Add eggs one at a time.
  4. Mix dry ingredients into wet ingredients. Fold in carrots and walnuts.
  5. Pour batter into pan. Bake for 35-40 minutes or until a toothpick comes out clean.
  6. Cool cake completely.
  7. For frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla. Spread over cooled cake.
