Ingredients

- 2 cups grated carrots
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 3 eggs
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 16 oz cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a bowl, mix flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt.
- Add eggs, oil, and vanilla. Mix until combined.
- Fold in grated carrots. Pour batter into the pan.
- Bake for 25 minutes or until a toothpick comes out clean.
- In another bowl, beat cream cheese, sour cream, and powdered sugar until smooth.
- Spread cheesecake mixture over the carrot cake layer.
- Bake for another 30 minutes or until set.
- Cool completely before serving.
Notes
- Store leftovers in the refrigerator.
- Top with whipped cream or frosting if desired.
- Use room-temperature cream cheese for smoother mixing.
