Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 16 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, mix flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  3. Add eggs, oil, and vanilla. Mix until combined.
  4. Fold in grated carrots. Pour batter into the pan.
  5. Bake for 25 minutes or until a toothpick comes out clean.
  6. In another bowl, beat cream cheese, sour cream, and powdered sugar until smooth.
  7. Spread cheesecake mixture over the carrot cake layer.
  8. Bake for another 30 minutes or until set.
  9. Cool completely before serving.
