Ingredients

  • 500g chicken thighs, boneless and skinless
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 4 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp vegetable oil
  • 2 cups chicken broth
  • 1 cup jasmine rice
  • 2 green onions, sliced

Instructions

  1. Marinate chicken thighs in soy sauce and brown sugar for 30 minutes.
  2. Heat oil in a pan over medium heat. Add chicken and cook until caramelised, about 5 minutes per side.
  3. Remove chicken and set aside. In the same pan, sauté garlic and ginger until fragrant.
  4. Pour in chicken broth and bring to a simmer. Return chicken to the pan and cook for 10 minutes.
  5. Meanwhile, cook rice according to package instructions.
  6. Serve chicken and broth over rice, garnished with green onions.
