- 1 tablespoon baking powder

- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups diced apples (preferably Granny Smith)
- 1/2 cup caramel sauce
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the diced apples and half of the caramel sauce.
- Do not overmix the batter; it should be lumpy.
- Chill the batter for about 30 minutes.
- Scoop the batter into a greased muffin tin, filling each cup about 2/3 full.
- Drizzle the remaining caramel sauce on top of each muffin.
- Bake in the preheated oven for 20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack.
