Ingredients

  • 1 lb sirloin steak, cut into bite-sized pieces
  • 1 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 4 large potatoes, peeled and cubed
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 2 tbsp butter
  • 1/2 cup unsalted butter, softened
  • 1 tbsp garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • Salt to taste

Instructions

  1. Season the steak bites with Cajun seasoning and salt.
  2. Heat olive oil in a skillet over medium-high heat. Cook the steak bites for 3-4 minutes per side until browned. Set aside.
  3. Boil the potatoes in salted water until tender, about 15 minutes. Drain and mash.
  4. Add milk, shredded cheddar cheese, and butter to the mashed potatoes. Stir until smooth.
  5. Mix softened butter, garlic, parsley, smoked paprika, and black pepper in a bowl to make cowboy butter.
  6. Serve steak bites over mashed potatoes with a dollop of cowboy butter.
