- 1 lb sirloin steak, cut into bite-sized pieces
- 1 tbsp Cajun seasoning
- 2 tbsp olive oil
- 4 large potatoes, peeled and cubed
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk
- 2 tbsp butter
- 1/2 cup unsalted butter, softened
- 1 tbsp garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- Salt to taste
Instructions
- Season the steak bites with Cajun seasoning and salt.
- Heat olive oil in a skillet over medium-high heat. Cook the steak bites for 3-4 minutes per side until browned. Set aside.
- Boil the potatoes in salted water until tender, about 15 minutes. Drain and mash.
- Add milk, shredded cheddar cheese, and butter to the mashed potatoes. Stir until smooth.
- Mix softened butter, garlic, parsley, smoked paprika, and black pepper in a bowl to make cowboy butter.
- Serve steak bites over mashed potatoes with a dollop of cowboy butter.
Notes
- Adjust Cajun seasoning to your spice preference.
- For creamier mashed potatoes, add more milk.
- Let the cowboy butter sit at room temperature for 10 minutes before serving for better flavor.
