Ingredients

  • 12 oz pasta (penne or fettuccine)
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 bell pepper, sliced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp chopped parsley for garnish

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Toss shrimp with Cajun seasoning until well coated.
  3. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink. Remove and set aside.
  4. In the same skillet, add garlic, onion, and bell pepper. Sauté for 3-4 minutes until softened.
  5. Pour in heavy cream and chicken broth. Stir and let simmer for 2 minutes.
  6. Add cooked pasta and shrimp back to the skillet. Toss to coat with the sauce.
  7. Sprinkle with Parmesan cheese and season with salt and pepper.
  8. Garnish with parsley and serve hot.
