A creamy and flavorful Cajun shrimp pasta that’s quick and easy to make, perfect for a weeknight dinner.


Ingredients

  • 8 ounces fettuccine or linguine
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1/2 cup diced bell pepper (red or green)
  • 1/2 cup diced onion
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large bowl, toss shrimp with Cajun seasoning until well coated.
  3. In a large skillet over medium heat, heat olive oil. Add shrimp and cook until pink and cooked through, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
  4. In the same skillet, add bell pepper, onion, and garlic. Sauté until vegetables are softened, about 3-4 minutes.
  5. Stir in heavy cream, bring to a simmer, and cook for 2-3 minutes.
  6. Add cooked pasta and Parmesan cheese to the skillet. Toss to combine and add shrimp back to the skillet. Cook until heated through.
  7. Season with salt and pepper to taste. Garnish with chopped parsley and serve.
