Ingredients

  • 1 tbsp olive oil
  • 1 lb smoked Andouille sausage, sliced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tsp Cajun seasoning
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced sausage and cook until browned, about 5 minutes.
  3. Add bell pepper, onion, and garlic. Cook until softened, about 5 minutes.
  4. Stir in rice, Cajun seasoning, and paprika. Cook for 1 minute.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
  7. Season with salt and pepper to taste.
  8. Garnish with sliced green onions before serving.
