- 1 tbsp olive oil
- 1 lb smoked Andouille sausage, sliced
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 tsp Cajun seasoning
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced sausage and cook until browned, about 5 minutes.
- Add bell pepper, onion, and garlic. Cook until softened, about 5 minutes.
- Stir in rice, Cajun seasoning, and paprika. Cook for 1 minute.
- Pour in chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
- Season with salt and pepper to taste.
- Garnish with sliced green onions before serving.
Notes
- Use pre-cooked sausage for faster cooking.
- Adjust Cajun seasoning to taste if you prefer more or less spice.
- Leftovers can be stored in the fridge for up to 3 days.
